Cucumber Mint Soup

1/2 Cucumber, cut and diced

Leeks 2 Leeks, Clean and slice into small piece size pieces

Fresh Mint Leaves, two Mint Leaves

1 tbsp of Bulgur Grain, boil 10 - 15 min.

Smetana 1 Stick

2 Cups of Buttermilk

1/2 Cup Sweet Mint Coriander Vinegar

1/2 Cup Cold Water

2 Tbsp Creme Anise Spice

3 Fresh Vanilla Beans

Raw Agave Syrup (optional)

In a Coffee Grinder

Grind together

Ingredients

One Anise Star

Cumin Seeds 1 Tbsp

(Toast seeds first before you grind)

Sesame Seeds 1 Tbsp

(Toast seeds first before you grind)

Allspice seeds 1 tsp

Add into Coffee Grinder and Grind together


Please Note: After you grind the spices and add two tablespoons of the Creme Anise Spice. Store in an airtight container for use remains fresh for up to two months. Use this spice in Cookies, Cakes, Tarts, Pie Fillings, and Dessert Soups. Nutrition Irene Jones



Instructions

  1. In a saucepan on low heat, add in one stick of Smetana.

  2. Pour in the 2 Cups of Buttermilk, Stir

  3. Add in the two Fresh Mint Leaves, Stir.

  4. Add in the 1/2 Cup of Sweet Mint Coriander Vinegar, Stir

  5. Put in the three Vanilla Beans, let simmer, and stir again.

  6. Add in the 1 Tablespoon of Bulgur Grains, Stir

  7. Now add in the two cups of cold water, Stir.

  8. Now wash the 1/2 Cucumber under cold water, dry with a paper towel (optional) to peel the skin or leave the skin on, then cut and diced. Add into the saucepan, Stir.

  9. Add in the 2 Tbsp of Creme Anise Spice, Stir

  10. Clean the two leeks; "(1.) Cut off the root, then trim the top of the green part and discard. Remove any tough or damaged outer leaves. (2.)Cut the center top green part of the leek, rinse the leek under cold water for 10 minutes, clean the leeks", dry with a paper towel, and then slice and add into the saucepan, Stir.

  11. Let simmer and stir while it simmers for ten more minutes on low heat. Once it has simmered for ten minutes, remove it from the heat, set it aside, and let it cool.

  12. Place saucepan in the refrigerator and chill it for 8 hours once it has softened and infused the Vanilla and Mint into the Dessert Soup [ Note: You may take it out of the fridge after four hours]. Spoon Cucumber Mint Soup into a small size serving bowl or a Mug and stir in one tsp of Raw Agave Syrup (optional) and Enjoy!

How to Clean Leeks before Cooking?
