Black Bean Soup

by Jade Beutler

INGREDIENTS:

2 teaspoons extra virgin olive oil

2 medium red onions, chopped

1 jalapeno pepper, minced

2 large cloves garlic, minced

1 tablespoon ground cumin

1/2 teaspoon chili powder

4 cups cooked black beans

2 cups water

2 tablespoons Barlean's organic flax oil

2 tablespoons sour cream or plain nonfat yogurt to top

Heat the olive oil in a medium saucepan. Add the onions and jalapeno pepper. Sauté over moderate heat, stirring frequently, until the onions begin to brown, about 4 minutes.

Stir in the garlic and reduce the heat to low. Cook, stirring constantly, for 1 minute. Stir in the cumin and chili powder.

Combine the onion mixture, beans, and water in a heavy pot. Cook over low heat, stirring occasionally, until the beans are hot, about 5 minutes.

If a smooth texture is preferred, transfer the soup to a food processor or blender and puree until smooth.

Once the soup is removed from heat, stir in the flax oil.

Top with a dollop of sour cream or yogurt.

"This soup can be made up to 4 days ahead: simply pour it into an airtight container, refrigerate, and reheat to serving temperature. Serves 4." Jade Beutler.
