Scrambled Tofu and Avocado Sandwich

Tofu is a Nutrient high protein food. It is good for overall wellness.

Ways To Cook Tofu: Steam it, or Fry it.


1 tablespoon olive oil

5 ounces extra firm tofu, pressed and crumbled

1/2 teaspoon turmeric powder

4 slices rye bread

1 tablespoon spicy mustard

1/2 medium-sized avocado, pitted, peeled and sliced

1 medium-sized tomato, sliced

1 small-sized cucumber, sliced

Salt and Ground Pepper, to season


Heat the Olive Oil in a frying pan over medium high heat. When it's hot, add the tofu and sauté for 8 minutes, stirring occasionally to promote even cooking.

Add in the turmeric powder and continue to sauté an additional minute or so.

Spread the spicy mustard on each piece of bread.

To assemble your sandwiches divide the tofu scramble between 2 bread pieces; top with avocado, tomatoes and cucumber; season with salt and black pepper to taste.

Close the sandwiches with the remaining bread slices and serve.
